Our blackberry vinegar is just about ready. Picked in the warm summer sun, and bathed in a soft rice wine vinegar for all this time. We now have good color and flavor extraction. The sweetness of the berry mellows the acidity and offers us the contrast and a good ride on the flavor train. We are looking forward to a baby arugula and Pine Nut salad with our Black Berry Vinaigrette, or how about Pan Roasted Mary’s Organic Chicken with a Black Berry Gastric and a Winter Root Vegetable Gratin.
The convergence of seasons is a highlight in any menu. When the gardens still have something left and a preview of our next crops is offered it is truly a time to celebrate. This time is much like the culinary effect of cultural occupations through out world history. For example, the effect of the French occupation of Mexico is part of the soul of the Mexican cuisine we have explored in our Taco Tuesday Menus. Another example, convergence of two separate, distinctive bodies of water in the ocean is where the feeding line for those of the sea is often found. And so this seems to also apply in the human feeding line throughout history. Come on in to Patrona and be a part of this special time of the year.
