Lets start with some of the things all restaurants use: Oil for frying foods, we use Rice Hull Oil a secondary product of the Californian Rice Industry. Rice oil takes high heat, does not impair flavor, no tran fatty acids, and is not only healthy for you but our environment as well. The carbon footprint is much smaller and a crop using extra water, fertilizers and petroleum based products isn’t even planted. Then the old oil is used to make biofuel right here in Ukiah by Yko Biofule
To Go Containers, Patrona could cut the cost pennies to a dollar if we didn’t care about what or how we do things or care about our kids. We use no GMO biodegradable containers made out of potato waste.
Kitchen scraps, is the buffet for chickens, pigs or gardens right here in Ukiah. Being part of the buying local foods loop is rewarding on so many levels. The community it builds, the charters who pick up the product and less stuff hauled off to the dump seems fine by me.
